Culinary Classes at Kalona Brewing Company

Kalona Brewing Company is excited to partner with Kirkwood Community College to offer five culinary classes to area residents! Creamy Soup for the Soul – March 24, 6-8pm
Warm up from the cool temps at the Kalona Brewery and learn the fundamentals of making a basic cream soup. Join Executive Chef, Justine Wieczorak, to build upon the basic recipe taught in this class, and take your soups to the next level, with your own variations at home! Participants will go home with the soup and the recipe. Materials fee $10. Tuition $39

Sassy Sauces! – April 14, 6-8pm
Sauce-making is a key to fine cuisine! Join Executive Chef, Justine Wieczorak, at the Kalona Brewery to learn step-by-step directions for making extraordinary sauces! Join us in this hands-on class preparing luscious alfredo sauce, an amazing chipotle sauce and a simple, yet out-of-this-world coconut curry sauce that goes great on everything! Materials fee of $10. Fresh Salsa and Beyond – April 21, 6-8pm
Easy, fast, simple and healthy. Enjoy an evening at the Kalona Brewery with Executive Chef, Justine Wieczorak, and learn to make fresh salsa from scratch! Salsa in a jar is great, but fresh is much better! You will learn to make a fresh traditional salsa with basic ingredients, and go beyond traditional tastes by also trying your hand at fresh mango or pineapple salsa! Materials fee $10. Tuition $49

Woodstone Pizza – July 28, 6-8pm
Old World Italy! Instructor Cody Sammons from the Kalona Brewery will begin by providing a brief history of the old-world Italian “Neapolitan Pizza” style and brick wood-fired pizza ovens and the Woodstone oven company and their products. He will demonstrate the preferred method of cooking pizzas and discuss the philosophy and science behind the process and incorporation of ingredients. Students will receive hands-on experience making a batch of dough from scratch, stretching the dough, placing the topping, and baking the pie (with supervision and assistance as needed). Pizza can be taken home by student or enjoyed at the restaurant! Bring your own container. Materials fee $10. Tuition $39

Soup for the Soul – Secrets of Stock-Based Soup – August 25, 6-8pm
Join Instructor Michael Hoard at the Kalona Brewery as he demonstrates how to make delicious golden stock, and build a soup from this basic foundation. Learn how to incorporate bones and scraps into the stock to avoid waste in the kitchen. We will learn the fundamentals of “reduction”, the cleaning or “breaking down” of a whole chicken, the benefits of roasting bones for stock, the importance of using fresh herbs, what to put in and what not to put in your stock pot, as well as some basic knife skills. We will make the soup, and students can take some home or enjoy at the restaurant! Please bring a container if you wish to take your soup home! Materials fee $10. Tuition $39
